WNWN Cocoa-Free Chocolate Stars in New Cocktail Menu at Award-Winning Lyaness

LONDON, 25 January 2023 – WNWN Food Labs, the first to bring cocoa-free chocolate to market, today announced Lyaness, named “World’s Best Bar” and “Best International Hotel Bar” at Tales of the Cocktail 2022 Spirited Awards, has added WNWN’s cocoa-free chocolate to its menu in a new cocktail: the Comma Chameleon.

Lyaness, located inside Sea Containers London hotel overlooking the River Thames, was created by Ryan Chetiyawardana, whom The Telegraph calls “The World’s Most Awarded Bartender.” The master of cocktails—who goes by the moniker Mr Lyan—holds multiple titles including International Bartender of the Year.

The Comma Chameleon features whisky and sake liqueur with a float of WNWN’s grated cocoa-free chocolate.

Lyaness’ new menu explores how foods and drinks shape cultural outlooks over generations. Lyan and his team pride themselves on taking a “cook’s approach” to cocktails and flavour creation, focusing on the highest quality ingredients, sustainability, and innovation in their menus and themes.

The Lyan family also includes the Washington DC bar Silver LyanSuper Lyan in Amsterdam, Seed Library in Shoreditch, East London, and a creative agency Mr Lyan Studio.

“We’ve always loved collaborating with friends, pioneers, and likeminded innovators, and WNWN have this in spades,” said Mr Lyan. “With the Comma Chameleon, we wanted to explore how animals and ingredients can morph into an unexpected or alternative form given their circumstances, and WNWN’s amazing cocoa-free chocolate provided us with a wonderful example of this.The incredible backstory to the chocolate provided us with a perfect talking point with guests to help them think differently about something very familiar and accessible to them.”

WNWN (pronounced “win-win”) uses sustainable, widely available plant-based ingredients in a proprietary process including traditional fermentation to create cocoa-free chocolate that tastes, melts, snaps and bakes just like chocolate. Its formula is vegan, caffeine-free, gluten-free, palm oil-free, lower in sugar than comparable products, and safe for dogs since it contains no theobromine. WNWN has released two cocoa-free chocolate products to the public in 2022.

Consumers are increasingly concerned about deforestation, habitat destruction, and unfair labor practices in the conventional chocolate supply chain. More than a million child laborers are estimated to work in Ivory Coast and Ghana, where three-quarters of the world’s cocoa is grown. Cocoa crops are also vulnerable due to climate change, including rising temperatures and reduced rainfall, which has led experts to predict chocolate shortages in the coming years.
